Orange Beef

Mike came over for dinner last night to catch up on holiday events, so I made us (and Sarah too) roast beef with orange slices cut into it, under and on top of it...it was delicious, with crispy cooked green beans & walnuts, and roasted potatoes & carrots. Yum! And the best part is that I have lots of beef leftover so I'm going to make a Guinness beef & mushroom pie. I've never made one before but I always get them when I'm in pubs so I'm going to try my hand at it. Plus, it's super cold outside and it's a great thing to eat when it's cold. My hair actually frosted over this morning on the way to work. It's really long and it's hard to dry all of it so the damp parts turned white!

My cousin (the widow) just found out that she's having a boy (they determined the sex yesterday). Mixed feelings...a little boy will be brought up just like a mini-Jeremy (the deceased father), which will be good and bad. He'll be named after him too -- Jeremy James (James is two grandfathers' names) and called JJ.

Update 2:

Just found out the wedding date for my friend Pam: March 25. I have school Mondays & Tuesdays, so it's possible that I can take the rest of that week off and visit Victoria/Vancouver for a day or two before heading to Alberta for the wedding. I think I have enough airline points so it wouldn't cost much.
