John's Cookies

My grandparents used to own a greasy spoon restaurant in the '60s and at christmas time my grandma would bake cookies and other sweets. There was one type of cookie that this fellow named John (a regular) always loved. So when I inherited her recipe card box, I discovered that what we had always called "No-bake chinese noodle cookies" or "chinese chews", she called John's Cookies. So that's what we call them now.

For those who don't know what I'm talking about, they are chocolate and butterscotch chips with peanuts and chow mein noodles (yes, chow mein noodles), all melted together and then hardened in the freezer.

Very addictive. Fred even got up in the middle of the night to get one (well, he was actually going to the bathroom, but somehow managed to take a detour to the fridge as well).

Recipe:
Mix equal portions of everything in a double-boiler. If you don't have a double-boiler, boil 3 inches of water in a large pot and then set a smaller pot or metal bowl inside. I do 1 cup. So, 1 cup chocolate chips, 1 cup butterscotch chips, 1 cup salted peanuts, 1 cup chow mein noodles. Mix well, and when it's all gooey and melted together, just plop spoonfuls onto parchment paper (NOT wax paper). You may want to drizzle remaining chocolate over each piece to make them more solid. And then put them on a cookie sheet in the freezer.
